For my 27th birthday two of my besties gave me this beautiful baking book called “Eat Me!”. It is mainly about cupcakes and all of those recipes are simply divine. The book also has a few extra treats such as these lavender cookies. I always wanted to get some culinary lavender to try out that recipe. I finally found them at the Savory Spice Shop, which has a shop in Costa Mesa.
This cookies are so simple and so simply perfect with that little note of delicacy. Perfect for any afternoon tea party.
Makes: 15-25 Cookies (depending on the size of the cookie cutters)
Prep Time: 30 minutes (incl. 15 minutes resting time)
Baking Time: 10 minutes
110 g/ 4 oz Unsalted Butter
55g/ 2 oz Sugar
170 g/ 6 oz All Purpose Flour
1 tbsp Dried Culinary Lavender, roughly chopped
Preheat the oven to 200°C/ 400°F. Lay a baking sheet unto a baking tray.
Cream together the butter and sugar until pale and fluffy. Stir in the flour and lavender and bring together in a soft ball. Cover and chill for 15 minutes.
Roll out the dough on a lightly floured surface. Using any sized or shaped cookie cutter (I liked the butterfly one), stamp out your biscuits. Place on a heavy baking sheet and bake for about 10 minutes, so they are just golden.
Leave the biscuits on the baking sheet for 5 minutes to set, then use a spatula to transfer them to a wire rack to cool.
