- 1 kg vegetables (aubergine, courgette; you could also add some peppers)
- 200 ml olive oil
- 1/3 cup mixed herbs (basil, rosemary, thyme, sage)
- Salt & Pepper
Wash the veggies and slice them. Mix them in a bowl with the olive oil, the fresh herbs, the salt and the pepper.
Put aluminium foil (or a baking sheet) on a tray, and dispatch evenly the veggies on it. Bake for 45-55 minutes.
Take the veggies out of the oven and let cool down. Now you’ll need a lot of paper towel to get the excess of oil of the veggies.
You can eat it like this, I just liked to put it on bread and make it a whole meal.
