Bounty Muffins 1

My manager recently went on maternity leave. On her last day, my colleague and I decided to make a little surprise gathering at work. I decided to make muffins and improvised with what I had in my cupboard. The result turned out to be quite decent.

Makes: 18 muffins
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients:

  • 220 g butter
  • 220 g sugar
  • 4 large eggs
  • 300 ml coconut milk
  • 100 g shredded coconut
  • 140 g semi-sweet chocolate chips
  • 280 g flour
  • 2 tsp baking soda

Method:

Preheat the oven to 350 °F and prepare your muffin tins with paper muffin cases.

Cream the butter and sugar together until light and fluffy. Add the eggs, one by one, then the coconut milk, the shredded coconut and the chocolate chips. Add the sifted flour and baking powder into the mixture and fold in gently.

Put the dough into the muffin cases and bake for 25 minutes. To check if they are ready, touch and see if they are springy. Cool the muffins on a wire rack.
